American cheeses and wines, lobster and caviar… The menu for the state dinner between Macron and Biden

It is a dinner with great fanfare that awaits Emmanuel Macron this Thursday evening at the White House. Under a tent in the gardens of the “White House”, several hundred guests are expected on the occasion of this three-day state visit. For this first state meal for Joe Biden, the small dishes were put in the big ones. Jill Biden, the First Lady of the United States highlights a menu where every detail has been thought out: “It’s an expression of welcome and friendship, a way of connecting us through a language that goes beyond words. And with each dish that will be placed on the table, there will be a meaning behind it.”

A menu not only gastronomic, but also political. The meal was inspired by the “common colors” of the two countries, red, white and blue, referring to the “common values” of France and the United States, “freedom, democracy, equality and the community”. The chefs for the evening, Cris and Susie, have therefore put together a menu that meets the requirements of the evening.

Lobster, caviar and beef

Starters, main courses, desserts but also cheeses and wines… The evening promises to be hearty for the Heads of State. The meal will begin with butter-poached Maine lobster, American Osetra caviar and Delicata squash ravioli. All accompanied by a tarragon sauce.

The dishes will also make the guests salivate. Beef calotte, a thick and tender piece of beef from the sirloin, will be served with shallot jam. The presidential couples will also be able to taste buttered potatoes cooked in three batches, Jerusalem artichokes, cress cream and a red wine reduction.

Cheese and wine yes, but 100% American

No croaking on the cheese side: it will indeed be American. A pride for Jill Biden, who underlines the presence on the table of “Rogue River Blue”, a 2019 world champion blue from the Cheese Awards. Two other artisan cheeses from the country will complete the assortment: “Cypress Grove Humboldt Fog”, a goat’s cheese that won bronze at the 2022 world championship, and “Deer Creek Cheddar Cheese”, from a small family creamery in Sheboygan in Wisconsin.

The end of dinner is marked by mouth-watering desserts. An orange “chiffon cake”, followed by roasted pears with a citrus sauce and finally a creme fraiche ice cream. Chardonnay and Sauvignon will accompany the guests during this meal, but both come from Californian vineyards. An effervescent rosé, a Louis Roederer brut, also American will be served. Enough to whet the palate of guests with the mix of French terroir and American products.
